8slicesbaconcooked just crispy and leave the grease in the pan
4portionsleaf lettucecleaned and prepared for a salad
3/4cupgreen onionsliced
1/4cupbacon fatwhat was left from frying the bacon
1/4cupvinegar
1/3cupsugar
Instructions
Leave grease in the pan from the bacon then add the vinegar and sugar heat to a boil and then set aside
Put the onions and lettuce and mashed potatoes, bacon broken up together
Pour dressing mixture over the rest of the ingredients
Mix and serve

You will need this hot but it can be made ahead and reheated. The dressing is about enough for a nice batch for 4 people or so. I like to start with lettuce, then onions in bottom of bowl and not add hot things until ready to toss and serve.
